Well, I have a bunch of photos to post today.  I hope you are all eating well!
This is a gluten free vegan jam thingy from Tula - it was awesome.  Super coconutty, kind of like a butter cookie.

Filo is vegan!  Who knew?  I was so excited about this new discovery that I made another filo cassarole a few days later with different insides.  First: beets, greens and sweet potatoes. Next: different veggies, more spices and soysage with lentil soup.
Next are the yummy healthy cinnamon rolls at this year's TEDx event at Concordia University.  What a surprise!  I ate several.
And a beautiful lemon cupcake from the New Cascadia Bakery booth at the Farmers' Market last Saturday.  Scrumptious.  Perfect frosting like that is not easy to find, even in Portland - very creamy, not too sweet.

Last, but not least, is a vegan platter of Ethiopian goodness from Dalo's.  I'd been craving this for weeks and it was well worth the wait!  Happy Friday the 13th and buon appetito!

Roswell and I made a three bean vegan chili. I'd been worried about it not getting thick enough but simmering uncovered for 30 minutes did wonders, and even thicker the next day. Secret ingredients were a dark beer, some liquid smoke and an inch of chopped ginger root.

First time cooking with okra (it's quite hard to come by around here), I made a curry adding some red lentils and what other vegetables I had lying around.

My first attempt at truffles, of a sort.

The big ones have a mixture of peanut butter, ground oats, ground flax seed, chopped walnuts, and sugar. The little ones are coconut buttercream made with unsweetened shredded coconut, earth balance, and confectioners sugar.. I dipped them in 72% dark chocolate, and they're coated in confectioners sugar to keep them from sticking together.

Noms.

After my first cupcake disaster I decided I wasn't going down without a fight. Here is round two! They turned out tasty and I'm quite pleased. I need to work on the frosting, as it started to run off a bit on these (maybe I didn't let the cupcakes or frosting sit long enough.)

Bad picture, but I was really excited to eat it! Homemade ramen! Experimenting with getting that clear broth at home!

Milky's is a frozen yogurt shop with a Vegan selection in my neighborhood.
The owner has separate stations for the Vegan options so they don't share the same machines as the regular versions. They also separate the topping selections from milk/non. They had four flavors today and I tried the chocolate. It was completely satisfying and left no after taste. It is made with soy milk and was deliciously creamy.
